Ingredients
500g, Carrots
150g, Onion
40g, Celery
100g, Leeks
4-5 cloves, Garlic
2 sprigs, Thyme
3-4 knobs, Butter
4 to 5 tbsp, Olive Oil
3 slices, Sorrentina’s Whole Wheat Ciabatta
Preparation
Roughly cut all the vegetables.
Season and roast all the vegetables with thyme and olive oil at 180°C until the carrot is cooked.
Blend the roasted vegetables with water. Then add in a knob of cold butter to it and blend again.
Once the vegetables are blended, add the puree to a pot and thin it down with water on medium heat. Later, let the soup simmer for some time.
Slice the onion finely and sauté them in a pan with some olive oil.
Season the soup and serve it with the sautéed onion slices and a toasted slice of our Ciabatta.
