This savoury Caprese Cacio E Pepe Pie Crust draws inspiration from Italy’s most well-loved Caprese salad, hailing from Capri. An excellent way to use fresh tomatoes, mozzarella cheese and Italian herbs, this pie crust is a real treat and is most often cooked during Italian summers. Regard-less of the season, this authentic Italian recipe makes for a wholesome meal packed with flavours.

Ingredients

FOR THE PIE CRUST

FOR THE FILLING

  • 1, Sorrentina’s Blush Pink Sauce
  • 2, Tomatoes, Sliced
  • 2, Mozzarella Cheese
  • 30gms, Flax Seeds/ Pine Nuts/ Sunflower Seeds
  • 20ml, Olive Oil

Preparation

FOR THE CRUST

  1. Add the crackers, bread crumbs, olive oil and water in a mixer
  2. Blitz them together to create a shortcrust pastry
  3. Allow the mixture to cool in the refrigerator
  4. Meanwhile, sheet the dough, making it 5mm thick
  5. Line it in the pie mould, making sure the edges are nicely scraped and even
  6. Dock the pie with a fork, making sure the pie crust does not swell but remains crispy
NOTE: Make sure the pie is chilled before baking. You can also blind bake it by adding dried beans, which can be removed later

FOR ASSEMBLY

  1. Add a layer of cheese at the base, along with sliced tomatoes
  2. Add in a layer of Sorrentina’s Blush Pink Sauce and some nuts
  3. Repeat the first two steps
  4. Bake it in a preheated oven for 14-15 minutes, at 180 degrees
  5. Once done, top it up with sunflower seeds or pine nuts, for an added crunch
