
Spaghetti Tossed in Homemade Pesto Sauce
Did you know that basil was once touted to be a symbol of love in Italy? So, when a sprig of basil landed in the hands of an experienced and passionate chef, they knew they had to create a dish worthy of the king of Italian herbs. The basil pesto has since been a classic ingredient of Italian cuisine. These days, pesto is popularly made with olive oil and pine nuts, but try making a more authentic Italian version with sunflower oil and seeds and we promise you’ll be hooked! Here’s a simple recipe for a dish that celebrates basil in all its glory, a Genovese Style Pesto! Toss it with strands of al dente Sorrentina spaghetti.

Ingredients
For the Pesto sauce

20-30 fresh basil leaves + for garnish
-
6-8 garlic cloves
-
5 tbsps sunflower seeds + for garnish
-
Salt to taste
-
40 grams parmesan cheese
-
4 tbsps sunflower oil
For Pasta
-
200 gms. Sorrentina Spaghetti Originale pasta
-
2 tbsps olive oil
-
2 tbsps chopped garlic
-
6-8 red cherry tomatoes, halved
-
6-8 yellow cherry tomatoes, halved
-
2 tbsps sliced black olives
-
½ tsp dried red chilli flakes
-
Salt & pepper for seasoning
-
Parmesan shavings for garnish

Basil leaves for garnish
Preparation

To make the pesto, grind basil leaves, garlic cloves, sunflower seeds and salt into a coarse paste. Add in 4 tbsps sunflower oil and parmesan cheese and mix it well. (While storing pesto, adding a layer of oil on top, will help to prevent discoloration of the sauce)

Blanch the spaghetti in a pot of well seasoned water. (please follow the instructions printed on the pack). Make sure you reserve some of the pasta water for the sauce

Heat oil in a non-stick pan, add chopped garlic, and boiled spaghetti. Toss well.

Add 6 tbsps water, cherry tomatoes, sliced olives, and red chilli flakes.

Mix well, add a ladle of the reserved pasta water and take the pan off the heat.

Add fresh pesto sauce and toss well. Adjust seasoning as per your taste.

Transfer onto a serving plate, garnish with parmesan cheese shavings and a sprig of basil.
