Few dishes in Italy are as fortifying as the risotto. A hearty rice preparation that makes good use of the flavours of the stock it’s cooked in, risotto is a versatile Italian dish that has steadily gained popularity around the world. While the classic Risotto Alla Milanese was first created in Milan, this dish now has plenty of variations. Our risotto recipe is a heady mix of truffled mushrooms, onions, butter and good ol’ parmesan and always makes for a spectacular addition to your dinner table.

Ingredients

  • 1 Cup, Arborio Rice/ Carnaroli Rice
  • 10gms, Onions, Chopped
  • 2 tbsps, Olive Oil
  • 30gms, Butter
  • 15ml, White Wine (Optional)
  • 5gms, Porcini
  • 1, Sorrentina’s Truffled Mushroom Sauce
  • 15gms, Parmesan

Preparation

FOR THE STOCK

  1. In a pan, add around 500ml of water and allow it to come to a boil
  2. Add in the porcini, so that it leaves behind its flavor
  3. Set aside

FOR THE RISOTTO

  1. In a deep vessel, add olive oil and 10gms of butter (Preserve the rest for later)
  2. Add the onions and let it sizzle
  3. Add in the unwashed raw risotto rice
  4. Let the rice toast, while stirring occasionally
  5. Deglaze this mixture with white wine (Optional)
  6. Season with salt and pepper
  7. Add in the porcini stock (The stock needs to be added in 3 stages)
  8. After the 3rd stage, check the rice. It should be nearly cooked through NOTE: The entire process takes around 18-22 minutes, depending on the grains of rice used
  9. Once the rice is done but still retains a bit of moisture, add in butter or parmesan cheese and 3tbsps of Sorrentina’s Truffled Mushroom Sauce
  10. Whisk this vigorously, using a flat spoon
  11. Serve hot
