Truffle Mushroom Alfredo

The classic Alfredo sauce comes from humble beginnings. Lovingly created in Rome by a man named Alfredo di Lelio for his pregnant wife, this sauce is a divine concoction of butter and cheese. Today, this sauce has multiple variations. Our simple but scrumptious recipe incorporates the earthy, umami flavours of mushrooms and truffles, to create an authentic but unique Italian dish that’s incredibly hearty and a joy to cook. Makes 1 portion

Ingredients

  • 1 portion, Sorrentina’s Tortellini
    OR 80gms, Dry Pasta
  • 1 Portion, Sorrentina’s Truffled Mushroom Sauce
  • 10ml, Olive Oil
  • 20gms, Onions, Chopped
  • 5gms, Olives, Pitted
  • 5gms, Sundried Tomatoes
  • 25gms, Wild Mushrooms
  • 5gms, Butter
  • 50ml, Water/ Vegetable Stock

Preparation

  1. Blanch the pasta for 1 minute, ensuring that it does not stick to the base. Alternately, use a dry pasta of your choice
  2. To a heated pan, add olive oil and chopped onions and let it caramelize
  3. Add the vegetable stock
  4. Pour in Sorrentina’s Truffled Mushroom Sauce. Whisk it, making sure there are no lumps
  5. Add the spaghetti to the sauce and let it cook for 2 minutes, along with the pitted olives
  6. Once the sauce thickens and the excess water evaporates, top with parmesan cheese (if needed)
  7. Plate the pasta and layer it with some more sauce and sundried tomatoes or olives and sautéed mushrooms
NOTE: A few more drizzles of truffle oil can be added in, for extra flavour
