Roasted Corn with Basil seed pesto and parmesan

Monsoons in India are about enjoying corn-on-the-cobs! There’s no greater joy than munching on hot corn kernels slathered in Butter and Spice Mix on a rainy day. Corn is an extremely versatile ingredient, which blends in well with other flavours. Loving its versatility, our chefs created an irresistible roasted corn with Basil Pesto and Parmesan.

Ingredients

  • 2, Corn on-the-cob
  • 1 Jar, Sorrentina’s Basil Seed Pesto 
  • 50 gms, Parmesan 
  • 15gm, Butter
  • Salt and Pepper for seasoning

Preparation

  • Peel the Corn from the husk. Make sure you remove all the strands and threads 
  • Steam it for 3-4 minutes till soft
  • Roast it on a flat griddle over high heat 
  • Once roasted and charred, slather the corn with Sorrentina's Basil Seed Pesto on all sides 
  • Rest it for a few seconds and then sprinkle Parmesan on the top. 
Tip: You can add softened butter into the Basil Pesto to elevate flavours.
