Minestrone is said to have originated hundreds of years ago and is essentially a thick vegetable soup, traditionally mixed with beans and/or pasta. Try our simple recipe for this Italian classic. We guarantee that you will go back for seconds.

Ingredients
- 1, Sorrentina’s All-Purpose Tomato Sauce
- 1 Carrot, Cubed
- 1 Green Zucchini, Cubed
- 1 Potato, Cubed
- 1 Onion, Chopped
- 2 tbsps, Olive Oil
- Fresh Basil
- Salt and Pepper for seasoning
Preparation
FOR THE CRUST
- Cut all the vegetables into 1mm cubes
- In a deep pan, add in a tablespoon of olive oil
- Start sautéeing the carrots, followed by celery, onions, zucchini and potatoes
- Add some water, such that the vegetables are fully submerged
- Let this cook for 7-8 minutes
- Add in 5 tbsps of Tomato Sauce, followed by fresh basil
- Let it simmer
- Serve hot
