Ingredients

  • 2tbsp, Olive Oil
  • 200gms, Italian Hummus
  • 1 Herbed Sourdough
  • 100gms, Fresh Mozzarella/ Feta
  • 50gms, Local Asparagus (Unblanched)
  • 5ml, Balsamic Vinegar 
  • Salt and Pepper for seasoning

Preparation

FOR THE ASPARAGUS

  1. Cut the woody part of the asparagus (usually the bottom end)
  2. Finely chop the asparagus
  3. Transfer this to a bowl and season with lime juice, olive oil, salt and pepper
  4. Set aside

ASSEMBLY METHOD

  1. Slice the herbed sourdough into clean chunks (preferably lengthwise)
  2. Apply olive oil on both sides and start toasting it on a hot plate

    Chef’s Tip: When toasting sourdough, splash a few drops of water around the slices. The steam released will help rehydrate the bread

  3. Once the bread is well-toasted, layer it with a generous dollop of chickpea hummus
  4. Top with sliced mozzarella or feta cheese (preferably a salty cheese)
  5. Add the marinated asparagus and finish with a drizzle of balsamic vinegar
