• 2tbsp Olive Oil
  • 200gms Italian-Style Garlic Hummus
  • 1 Sourdough Bread
  • 100gms Fresh Mozzarella/ Feta
  • 50gms Local Asparagus (Unblanched)
  • 5ml Balsamic Vinegar
  • Salt and Pepper for seasoning
  • FOR THE ASPARAGUS
  • Cut the woody part of the asparagus (usually the bottom end)
  • Finely chop the asparagus
  • Transfer this to a bowl and season with lime juice, olive oil, salt and pepper
  • Set aside
  • ASSEMBLY METHOD
  • Slice the sourdough bread into clean chunks (preferably lengthwise)
  • Apply olive oil on both sides and start toasting it on a hot plate
  • When toasting sourdough, splash a few drops of water around the slices. The steam released will help rehydrate the bread
  • Once the bread is well-toasted, layer it with a generous dollop of hummus
  • Top with sliced mozzarella or feta cheese (preferably a salty cheese)
  • Add the marinated asparagus and finish with a drizzle of balsamic vinegar
