• 1 Eggplant
  • 40g Olive Oil
  • 1 Sorrentina’s All-Purpose Tomato Sauce
  • 2 packs Sorrentina’s Herbed crostini
  • Salt and pepper to season
  • Cut the eggplant into dices
  • Once done, season and roast them in an oven at 200°C for 20 minutes.
  • Add All-Purpose Tomato Sauce to a pan and then mix in some water.
  • Cook the sauce for 5 minutes and then add diced eggplant to it.
  • Cook until the eggplant softens and mixes in with the sauce.
  • Lastly, take it off the heat and enjoy it with our herbed crostinis.
