  • 2 boneless, skinless chicken breasts
  • 60g, cup bread crumbs
  • 50g, cup grated parmesan cheese
  • 1 tsp, salt
  • ½ tsp, pepper
  • 2 eggs
  • 50g, shredded mozzarella

  • 1 jar, Sorrentina's Romesco Cream Cheese


  • Preheat oven to 325°F (190°C)
  • Cut chicken into strips
  • In one medium-sized bowl, mix the bread crumbs, parmesan cheese, salt, and pepper.
  • In another bowl, crack the eggs and whisk until scrambled.
  • Coat the chicken in the scrambled eggs mixture and then in the bread crumbs. Repeat the process for all chicken strips.
  • Next place the chicken on a baking tray and bake for 20 minutes, flipping halfway through.
  • Sprinkle each side with mozzarella and bake again for 5 more minutes or until the cheese is melted.
  • Serve with Romesco Cream Cheese Dip.
