Asparagus Sourdough Bruschetta

Touted as being Italy’s favourite appetizer, bruschetta is a dish that has fed Italian farmers and la-bourers for a long time, on account of its simplicity and affordability. While the toppings differ from region to region, authentic Italian bruschetta in its simplest form, comes rubbed with garlic, olive oil and a sprinkling of salt. At Sorrentina, we’ve elevated this modest offering using sourdough bread, some asparagus and our signature sauce. Go ahead and try this simple bruschetta recipe for your-self.

Ingredients

FOR THE PARMESAN FONDUE FILLING

  • 250gms, Hung Curd
  • 40gms, Dill, Chopped
  • 5gms, Garlic, Chopped
  • 2gms, Olive Oil
  • 1, Lemon Juice
  • Salt and Pepper for seasoning 

FOR THE FINAL TOUCHES

  • 1 Sourdough WW Ciabatta
  • 350gms, Asparagus
  • 10gms, Basil
  • 10ml, Olive Oil 
  • 100gms, Sorrentina’s Sundried Tomato Pesto
  • Salt and Pepper for finishing

Preparation

FOR THE HERBED YOGHURT

  1. Spoon out the hung curd/yoghurt in a bowl. Make sure it’s lump-free
  2. Add in the olive oil and lemon juice and whisk the mixture. The curd should be pliable and not very thick
NOTE - A spoonful of water can be added to make it more pliable
  1. Add the chopped garlic and chopped dill to the mixture and set it aside

FOR THE ASPARAGUS

  1. Check the asparagus. If it feels woody, peel the skin
  2. Discard the bottom half of the asparagus
  3. Blanch the asparagus for 30 seconds in hot water
  4. Dunk the blanched aspargus in ice cold water, immediately
  5. Once chilled, chop and marinate with fresh basil and olive oil
  6. Season with salt and pepper

FOR THE BRUSCHETTA

  1. Slice the bread vertically
  2. Toast the slices on a flat pan
  3. Drizzle it with olive oil for a nice, crusty finish
  4. Add 1tbsp of water to the pan and keep it covered. Allow the sourdough to rehydrate
  5. Once toasted, take it off the pan
  6. Start by applying a base layer of the herbed yoghurt
  7. Add a spoonful of Sorrentina’s Sundried Tomato Pesto on top of the herbed yoghurt
  8. Top with the marinated asparagus and serve immediately
