Arugula Grilled Fruit Salad with Focaccia Croutons

Made fresh using a few simple ingredients, the smoky flavour of grilled fruit and the peppery bite of arugula really pops out. Sprinkle in croutons made from Sorrentina's Burnt Garlic Focaccia Bread and the rich umami flavours will literally add sunshine to this salad.

Ingredients

  • 2-3 bunches, Arugula
  • 7 to 8, Orange segments
  • 7 to 8 slices, Apples
  • 64 g, Pomegranate
  • 3 tbsp, Olive Oil
  • Salt and pepper – to season
  • ¼ pc, Sorrentina’s Burnt Garlic and Olive Focaccia

Preparation

  • Wash and clean arugula.
  • Remove segments of oranges.
  • Cut apples into big dices.
  • Next, grill the oranges and apples until they’re charred on both sides.
  • Cut the focaccia into large croutons and toss in olive oil to bake until crispy.
  • Toss the arugula in olive oil, salt and pepper and place in salad bowls.
  • Add the oranges and apples on the arugula and garnish with the pomegranates.
